  • Maltose, also known as maltobiose or malt sugar, is a disaccharide formed from two units of glucose joined with an α bond
  • Maltose is composed of two a-D-glucose unit held together by a(1>4) glycosidic bond.
  • The free aldehyde group is present on C1 of second glucose answers the reducing reaction besides the osazone formation.
  • Maltose can be hydrolyzed by dilute acid or the enzyme maltase to liberate two molecules of a-D-glucose.
